This Calabrian sauce is a marriage of Red PGI Tropea onions (IGP cipolla rossa di Tropea) cultivated close to the production, with cocoa beans, for a mild tangy flavor and subtle sweetness, with just a touch of spice from cinnamon and black pepper.
