Filotea's Artisan Egg Pasta is made from a very unique recipe preserving age-old techniques, monitored by a "Mastro Pastaio", who is changing the recipe daily depending on the humidity, temperture and sun. At the core of this fettuccine al Tartufo is the prized black truffle, known for its delicate and earthy flavor, it is skillfully incorporated as small pieces into the fettuccine dough, which is made with a mixture of durum wheat semolina, '00' flour and fresh free range eggs (27%), all ingredients are sourced locally. The dough is bronze drawn and slowly dried at a low temperatures, ensuring a unique rough and porous pasta which allows for the perfect absorption of sauces. Each batch is handled with the utmost care to achieve the same perfect result. This luxurious appearance and exquisite taste makes it a standout dish , this pasta will impress with its refined elegance and depth of flavor. Wrapped using a traditional hand folding technique that resembles that of fresh homemade pasta, but being that it is a naturally dried pasta, it can still be stored up to two years. Cooking time is a quick 4 minutes in vigourously boiling water.
