From the Marche region comes this elegant egg pasta, Linguine with garlic & parsley. Filotea's Artisan Egg Pasta is made from a very unique recipe, passionately monitored by a "Mastro Pastaio", who is changing the recipe daily depending on the humidity, temperture and sun. It is made of a mixture of durum wheat semolina, '00' flour and fresh free range eggs (27%) infused with aromatic with garlic and parsley , all ingredients are sourced locally. The dough is bronze drawn and slowly dried at a low temperatures , ensuring a unique rough and porous pasta which allows for the perfect absorption of sauces. Each batch is handled with the utmost care to achieve the same perfect result. Delicate green specks of parsley against the golden pasta creates a visually appealing dish that is sure to impress, bursting with flavor. Wrapped using a traditional hand folding techniqueand resulting in a taste that resembles that of fresh homemade pasta, but being that it is a naturally dried pasta, it can still be stored up to two years. Cooking time is a quick 4 minutes in vigourously boiling water.

A long and lean flat pasta made with garlic and parsley in the dough, with a similar length to spaghetti and rough texture, absorbing any sauce you combine with it. It truly tastes homemade, perfect pairing with smoked fish sauces, such as salmon or swordfish, or any light, olive oil based sauce. Simply tossed with a quality Cold Pressed Extra Virgin Olive Oil such as “Tamia” bronze or Planeta traditional or pairing with a creamy sauce, this linguine makes every meal a celebration of flavor and tradition.
