Filotea, located in the heart of Marche region, produces pasta according to local traditons. Filotea - the name is Greek Origin meaning "God's Friend". The traditional Mezze Maniche, said to be from the North of Italy, is made with bronze dyes to ensure a perfect absorption of the sauces. A tubular ridged pasta variety that is splendidly versatile. The artisanal nature of this pasta does not allow to define a unique cooking time. It is important to immerse each package of pasta in at least 10 liters of boiling water and check the cooking until it reaches the preferred texture.
