Through a long 60 day process of fermentation and ripening, from white to black, the garlic abandons the intense and pungent aroma in favor of greater digestibility, more of a soft and delicate taste with a complex aroma and sweetness, the classic balsamic and licorice notes of black garlic are enhanced by the typical freshness of Voghiera D.O.P. Garlic.
