Black Garlic & Sea Salt from Nero di Voghiera is from Nero Fermento's gourmet line. Cervia salt is a sweet whole sea salt. Salt is sweet for geographical, historical, climatic and chemical reasons. The position of the salt pan, the northernmost in Italy, the characteristics of the basins and the Adriatic Sea, make sure that the salt obtained from it is made up of very pure sodium chloride, with a low, almost non-existent presence of other chlorides more bitter, such as magnesium sulphate, calcium sulphate, potassium sulphate and magnesium chloride. Furthermore, the choice not to artificially dry or chemically whiten the salt leaves it whole and highly soluble. Black garlic is produced thruough the natural fermentation of Voghiera Garlic PDO under closely monitored conditions, without additives, preservatives or yeasts, in controlled humidity and temperature for at least 60 days. A long process by which Voghiera’s garlic, an exquisitely typical Italian garlic famous for its gentle taste, loses the typical pungent taste of traditional garlic to become gentler and easier to digest. Colour, consistency and taste, but also nutritional properties: The fermentative process decreases the allicin content, responsible for the more aggressive aspects of traditional garlic, and increase its digestibility as well as the concentration of beneficial nutrients for the organism. Nero di Voghiera contains a greater amount of antioxidants, calcium, protein and twice the phosphorus than common unfermented garlic, helping in particular to prevent aging and protecting the heart. Perfect for flavoring any dish. A soft and delicate taste enhanced by the typical freshness of Voghiera D.O.P. Garlic. It has a slight tang of tamarind or balsamic vinegar and a mild sweetness that resembles rich molasses with the complexity and umami notes of soy sauce infused with the special sweet sea salt from Cervia.
